The carotenoid family is made up of plant pigments that give vegetables and fruits a yellow and reddish color. Ironically, the foods with highest natural levels of carotenoids are dark-green leafy vegetables like parsley, kale, spinach, peas and broccoli; so when they say carrots make you see in the dark, perhaps they meant kale!
